The present invention relates to glutinous rice cake ice including ripe persimmon and a manufacturing method thereof, and, in particular, to glutinous rice cake ice including ripe persimmon and a manufacturing method thereof, wherein the glutinous rice cake ice comprises glutinous rice cake stuff obtained by separating the flesh part of ripe persimmon, or the flesh part of half-dried persimmon; glutinous rice cake skin manufactured by mixing glutinous rice flour, rice flour, tapioca powder, corn syrup, egg white, aloe gel, salt and sugar, and to be filled with the glutinous rice cake stuff; and aloe gel evenly coated on the part which the glutinous rice cake stuff and the glutinous rice cake skin contact. The glutinous rice cake ice including ripe persimmon according to the present invention has advantage of maintaining the initial taste as the moisture content of the glutinous rice cake stuff is maintained while the moisture penetrating into the glutinous rice cake skin is blocked by coating aloe gel on one side of the glutinous rice cake skin filled with the glutinous rice cake stuff; and providing a chewy texture of glutinous rice cake, a sweet and soft texture of ripe persimmon as ripe persimmon and glutinous rice cake are harmonized. Therefore, a novel ripe persimmon processed product which makes consumers find satisfactory can be produced. Moreover, the present invention has other advantage that various effects of aloe gel are able to be taken with the effects of ripe persimmon by adding aloe gel.
