PROBLEM TO BE SOLVED: To produce frozen root vegetables in which softening and fall-part are suppressed when they are subjected to heat treatment or the like, and which can keep a texture that is original to vegetables.SOLUTION: This invention relates to a method for producing frozen root vegetables that includes: a process of subjecting root vegetables to preheating treatment a process of bringing the root vegetables into contact with an acidic solution and a process of freezing. The process of bringing the root vegetables into contact with the acidic solution is provided after the process of preheating treatment and before the process of freezing.
