PROBLEM TO BE SOLVED: To provide a fractional modifier for an oil-and-fat, which is added to an oil-and-fat as a fractional object, for example, palm oil, to enable an improvement in a yield of a liquid fraction therein, in the case where the oil-and-fat which is a mixture of solid components and liquid components at ordinary temperature is fractionated into its liquid fraction and solid fraction by a natural fractionation method carried out under usual conditions.SOLUTION: The fractional modifier for an oil-and-fat comprises a diglycerol aliphatic acid ester using as a main constituting aliphatic acid a mixed aliphatic acid of two or more selected from 8-22C aliphatic acids, especially 12-18C aliphatic acids.COPYRIGHT: (C)2012,JPO&INPIT【課題】常温で固体の成分と液状の成分との混合物である油脂をその液状部分と固体部分に分ける分別を、通常行われている条件の自然分別法により行う場合において、分別対象の油脂、例えばパーム油等に添加され、液状部分の収率の向上を可能とする油脂の分別改質剤を提供する。【解決手段】炭素数8~22の脂肪酸、特に、炭素数12~18の脂肪酸より2種以上選ばれてなる混合脂肪酸を主構成脂肪酸とするジグリセリン脂肪酸エステルからなることを特徴とする油脂の分別改質剤。【選択図】なし
