PROBLEM TO BE SOLVED: To provide a new health drink by using koji in cow milk followed by fermenting.SOLUTION: A method for producing koji fermented milk beverage includes: a heating step of heating cow milk a mixing step of mixing rice malt in a particulate form of a diameter of 3 mm or less with cow milk after the heating step and a fermentation step of fermenting the mixed liquid obtained in the mixing step. The method for producing the koji fermented milk beverage includes further mixing rice following koji in the mixing step. The koji fermented milk beverage produced by the production method has characteristics of cow milk and rice-made sweet drink, has extremely abundant amino acid, and is expected as a new health drink.COPYRIGHT: (C)2015,JPO&INPIT【課題】牛乳に麹を用い発酵させた新たな健康飲料を提供する。【解決手段】牛乳を温める加温工程と,加温工程後の牛乳に直径3mm以下の粒子状にした米麹を混合する混合工程と,混合工程により得られた混合液の発酵を行う発酵工程により、麹発酵乳飲料の製造する方法。混合工程において、麹に続いて、米類を更に混合する麹発酵牛乳飲料の製造方法。【効果】前記製造方法により製造した麹牛乳発酵飲料は,牛乳と甘酒の特性を有するとともに,アミノ酸が非常に豊富であり,新たな健康飲料として期待できる。【選択図】図1
