PROBLEM TO BE SOLVED: To provide an inhibitory composition of blood sugar level elevation that can be industrially synthesized, and contains a substance having taste properties as an active ingredient.SOLUTION: An inhibitory composition of blood sugar level elevation contains one or two or more selected from the group consisting of sugar carboxylic acid obtained by oxidizing an aldehyde group on the reducing terminal side of a starch decomposition product, a transfer reaction product or lactose which have the degree of polymerization of 2 or more, and salt thereof and lactone thereof.
