To provide a technique for regulating the balance of flavor and salty taste of a food without damaging the balance of the flavor originally possessed by the food.

SOLUTION: The technique using an oil and fat in which the content of oleic acid contained in the whole fatty acid composition is &ge 70 wt.% and as a salty taste-enhancing component in a food and drink is provided. The method for enhancing the salty taste uses the oil and fat having &ge 70 wt.% oleic acid content contained in the whole fatty acid composition, the method for reducing the salt of the food and drink using the oil and fat, the salt-reduced food seasoned or cooked by using the oil and fat and the method for producing the salt-reduced food involving a step for carrying out the seasoning and/or the cooking by using the oil and fat are also provided.
