PURPOSE: A natural pigment extraction method from Korea native mulberry, and processed food using thereof are provided to use byproducts obtained from a juicing process of the mulberry. CONSTITUTION: A natural pigment extraction method from Korea native mulberry comprises the following steps: adding water or a solvent to residues obtained by compressing and extracting the mulberry, and filtering the mulberry extract; extracting the mulberry residues; adding 10% of saccharide into the obtained pigment; and high-temperature sterilizing the mixture at 75 deg. C for 30 minutes to obtain a natural pigment concentrate. The natural pigment is for producing rice cake, drink or pudding.
