More specifically, the present invention relates to a method for making buckwheat doenjang, comprising: immersing soybeans in water, and immersing buckwheat therein before draining； performing the draining after a predetermined period of time, and then steaming the soybeans and the buckwheat in a mixture state； making koji from the steamed soybeans and buckwheat in a mixture state； and adding steamed soybean mash, salt, and water, followed by mashing and aging.본 발명은 메밀된장을 제조하는 방법에 대한 것이다. 더욱 상세하게는, 본 발명은 대두를 침지한 후 물을 빼기 전 메밀쌀을 혼합 침지하고, 일정시간 경과 후 물을 빼고 혼합 증자한 후, 증자된 대두와 메밀쌀을 혼합 제국하고 증자대두 덧밥, 소금 및 물을 첨가하여 사입하고 숙성시키는 메밀된장의 제조방법에 관한 것이다.
