PROBLEM TO BE SOLVED: To provide an instant noodle production method.SOLUTION: The instant noodle production method comprises: a step for adding 30 mass% or more and less than 40 mass% of modified starch to 100 mass% of wheat flour for noodle, for preparing precursor powder a step for adding water to the precursor powder and mixing for preparing a mixture a maturation step for making the mixture mature for 5-20 minutes a step for dividing the matured mixture into noodle lines and a drying step for drying the noodle lines. The instant noodle is preferably udon.
