The present invention relates to a manufacturing method of a low-calorie sweetener. More specifically, the present invention relates to a manufacturing method of a low-calorie sweetener, which comprises the following steps: coating sugar with stevioside； firstly drying the coated sugar； aging the firstly dried sugar； secondly drying the aged sugar； and grinding the secondly dried sugar. According to the present invention, provided is a low-calorie sweetener which is similar to sugar in taste quality and has 150-300 times the sweetness of sugar, thereby reducing the use of sugar and having an excellent sweetening effect.본 발명은 저칼로리 감미료의 제조방법에 관한 것으로, 보다 상세하게는 설탕에 스테비오사이드를 코팅하는 단계, 상기 코팅된 설탕을 1차 건조시키는 단계, 상기 1차 건조된 설탕을 숙성시키는 단계, 상기 숙성된 설탕을 2차건조시키는 단계 및 상기 건조된 설탕을 분쇄하는 단계를 포함하는 저칼로리 감미료의 제조방법에 관한 것이다. 본 발명에 따르면 설탕과 유사한 미질을 가지면서 설탕대비 150~300배의 감미를 가져 설탕의 사용량을 줄이면서 탁월한 감미 효과를 낼 수 있는 저칼로리 감미료를 제공할 수 있다.
