The present invention relates to a method for the enzymatic reduction of cystine to cysteine comprising contacting cystine with a reduction solution comprising: (i) an active glutathione reductase (EC1.8.1.7)； (ii) a cofactor； and (iii) glutathione； and recovering a cysteine comprising composition, wherein the reduction solution has a pH of at least 6 during contacting with cystine.La présente invention concerne un procédé de réduction enzymatique de cystine en cystéine consistant à mettre en contact de la cystine avec une solution de réduction comprenant : (i) une glutathion réductase active (EC1.8.1.7) ； (ii) un cofacteur ； et (iii) du glutathion ； et à obtenir une composition comprenant de la cystéine, la solution de réduction ayant un pH supérieur ou égal à 6 pendant la mise en contact avec la cystine.
