PULVERULENT COMPOSITION COMPRISING A STEVIA EXTRACT AND A CARBOHYDRATE, METHOD FOR MANUFACTURING THE SAME AND APPLICATION THEREOF IN THE FOOD AND PHARMACEUTICAL FIELD
Crystal powder composition comprises 80 wt.%, preferably 90 wt.% of crystals of a crystallizable carbohydrate or a mixture of crystallizable carbohydrates, and 0.1-20 wt.%, preferably 0.3-10 wt.% of an extract of stevia, which is encapsulated in the crystals of the crystallizable carbohydrate or the mixture of crystallizable carbohydrates, where the composition is provided with sweetness and a flavor without bitterness and has a melting point that is less than the crystallizable carbohydrates or mixture of crystallizable carbohydrates. Independent claims are included for: a mixture comprising the crystal powder composition with carbohydrate; #a method for preparing the crystal powder composition including above per se, comprising drying a homogeneous syrup having a stable viscosity of less than 50 centipoises (cP), by spraying, where the syrup is constituted of the extract of stevia, the crystallizable carbohydrate or mixture of crystallizable carbohydrates and water and has a temperature of less than 50[deg] C, preferably less than 30[deg] C for obtaining particles of amorphous structure constituted of crystallizable carbohydrates or mixture of crystallizable carbohydrates and extract of stevia and water (1%), and homogeneously crystallizing the extract of stevia and the crystallizable carbohydrates or mixture of crystallizable carbohydrates; #a crystal comprising a crystallizable carbohydrates or mixture of crystallizable carbohydrates and the extract of stevia; and #a particle of amorphous structure comprising crystallizable carbohydrates or mixture of crystallizable carbohydrates, the extract of stevia and water.
