Disclosed are: a method for producing a desalted milk whereby the content of monovalent minerals can be significantly lowered while preventing a decrease in divalent mineral content; a desalted milk produced by said method; a method for producing a cheese and a whey from said desalted milk; and a cheese and a whey produced by said method. A desalted milk having a significantly lowered monovalent mineral content which is obtained by passing a starting milk material through a chlorine-type anion exchange resin, and then removing monovalent minerals contained in the starting milk material by a membrane separation method. A cheese and a whey which are produced by heating the desalted milk obtained above to form a curd, and then subjecting the curd and a liquid other than the curd to solid/liquid separation.
