An emulsifying composition (A) comprises (by weight): (a) 10-90% arachidyl and/or behenyl alcohol (b) 90-10% phosphate ester of arachidyl and/or behenyl alcohol and (c) up to 20% alkyl polyglycoside(s) (I). An emulsifying composition (A) comprises (by weight): (a) 0-90 (preferably 15-90, especially 30-70)% arachidyl and/or behenyl alcohol (b) 90-10 (preferably 85-10, especially 70-30)% phosphate ester of arachidyl and/or behenyl alcohol and (c) up to 20 (preferably 1-20, especially 1-10)% alkyl polyglycoside(s) of formula RO(Y) p (I). R : 14-22C (preferably 20-22C) alkyl Y : residue of a 5-6C sugar (preferably glucose or xylose) p : 1-5 (preferably 1-2.5, especially 1-2).
