To provide an oil and fat composition for cream puff capable of manufacturing a puff shell having smooth surface, good in volume and an inner phase, and high in aging resistance, a cream puff dough, a puff shell and a manufacturing method of the puff shell.SOLUTION: The oil and fat composition for cream puff contains soluble saccharide of 3 to 40 mass% as a solid component and oil and fat is a continuous phase. The oil and fat composition for cream puff preferably has oil and fat content of 30 to 80 mass%. The oil and fat composition for cream puff preferably contains 1 to 10 mass% of protein. The cream puff contains the oil and fat composition for cream puff. The puff shell is manufactured by a burning treatment of the puff dough.
