Vorgeschlagen wird eine Stoffmischung, enthaltend • (a) Vanillin und • (b) Vanillylvanillat. Überraschenderweise wurde gefunden, dass synthetisches Vanillin und synthetisches Vanillylvanillat im Gegensatz zu ihrem Geschmacksprofil als Einzelsubstanzen ein synergistisches Verhalten zeigen und innerhalb breiter Grenzen der natürlichen Vanille sehr nahe kommen.The invention relates to a material mixture, containing (a) vanillin, and (b) vanillyl vanillate. Surprisingly, it was found that contrary to their taste profile, synthetic vanillin and synthetic vanillyl vanillate show a synergistic behavior as individual substances, and within broad limits come very close to the natural vanilla.L'invention concerne un mélange de substances renfermant : (a) de la vanilline et (b) du vanillylvanillat. De façon inattendue, il s'est avéré que la vanilline de synthèse et le vanilylvanillat de synthèse présentent, à la différence de leur profil aromatique, en tant que substances individuelles, une action synergique et, dans une plus large mesure, s'apparentent fortement à la vanille naturelle.
