PROBLEM TO BE SOLVED: To provide a composition for improving rice, having a new excellent aging suppression effect without change in the taste of rice and a rice with suppressed aging using the composition.SOLUTION: A composition for improving rice contains branched oligosaccharide having a branched chain of maltotriose as active ingredient. The manufacturing method of the same is provided. A method of suppressing aging of rice and a method of manufacturing rice include adding the composition to rice.
