In an embodiment of the present invention, disclosed is a preparation method of black Allium hookeri, which comprises: a washing step (S10) for washing Allium hookeri roots； a maturing step (S20) for maturing the washed Allium hookeri roots at 60-80°；C for 192-288 hours； and a drying step (S30) for drying the matured Allium hookeri roots at room temperature for 5-8 days.본 발명의 일 실시예에 따른 흑삼채 제조방법은, 삼채의 뿌리를 세척하는 세척단계(S10)와, 세척된 상기 삼채의 뿌리를 60℃ ~ 80℃에서 192시간 ~ 288시간 동안 숙성시키는 숙성단계(S20), 및 숙성된 삼채의 뿌리를 상온에서 5일 ~ 8일 동안 건조하는 건조단계(S30)를 포함한다.
