PROBLEM TO BE SOLVED: To provide a manufacturing method of low-salt jellyfish preserved in salt, capable of reducing salting time while salting with a low salinity.SOLUTION: The manufacturing method of low-salt jellyfish preserved in salt includes the steps of: a) cutting jellyfish b) removing salt content from the cut jellyfish and c) mixing the salt content-removed jellyfish with a salting liquid under exposure to UV irradiation for preservation of the jellyfish in salt. In the step a), the jelly fish is cut into pieces having a width of 3 to 10 mm and a length of 30 to 100 mm. In the step b), the cut jellyfish is immersed in water for 10 to 20 hours. In the step c), the salting liquid is formed of an aqueous solution including 1 to 5 wt.% of salt and 1 to 5 wt.% of lemon juice.
