The present invention relates to a method for producing functional perilla or sesame oil containing turmeric. More specifically, the method comprises: a washing step of collecting turmeric from December 15 to 31 and washing the turmeric in flowing water； a drying step of naturally drying the turmeric in the shadow after the washing step； a crushing step of cutting and crushing the turmeric after the drying step； an oil production step of producing perilla or sesame oil； and an infusion step of inserting the turmeric completing the crushing step into the oil produced in the oil production step to soak a fat-soluble component from the turmeric. Accordingly, turmeric used for a material for curry is included in perilla or sesame oil, such that unique smell and taste of the turmeric are added, thereby increasing performance of the produced perilla or sesame oil. A curcumin component, which has antioxidant, antitumoral, and antibacterial effects, contained in the turmeric is added to the perilla or sesame oil, thereby increasing functional food additive effect. Moreover, a process for producing perilla or sesame oil containing turmeric is simple and production cost thereof is less.본 발명은 울금을 함유하는 기능성 들기름 또는 참기름을 제조하는 제조방법에 관한 것으로, 더욱 상세하게는 12월 15일 ~ 31일 이내에 울금을 채취한 후 흐르는 물에 세척하는 세척단계, 상기 세척단계를 마치고, 음지에서 자연건조 하는 건조단계, 건조단계 후 울금을 절단 및 분쇄하는 분쇄단계, 들기름 또는 참기름을 제조하는 기름 제조단계 및 상기 분쇄단계를 마친 울금을 상기 기름 제조단계에서 제조된 기름에 투입하여 지초의 지용성 성분을 우려내는 인퓨즈단계로 이루어지는 울금이 함유된 들기름 또는 참기름 제조방법에 관한 것이다.본 발명에 의한 울금이 함유된 들기름 또는 참기름 제조방법은 카레 재료로 사용되는 울금을 참기름 또는 들기름에 함유시켜 울금 특유의 냄새 및 맛이 첨가되어 제조되는 참기름 또는 들기름의 기호도를 높였고, 참기름 또는 들기름에 울금에 함유된 항산화, 항종양 및 항균작용에 효과가 있는 커큐민 성분을 더하여 기능성 식재료 첨가제 효과를 높였으며, 울금을 함유하는 들기름 또는 참기름의 제조 과정이 간편하며, 이때 생산에 사용되는 비용이 적다.
