PROBLEM TO BE SOLVED: To solve the problems that: it is necessary to remove bitterness components of turmeric and stably disperse in a hydrophilic food material in order to achieve continuous intake as an anti-dementia food material, of turmeric having as the main component curcumin which passes a blood brain barrier, and has a direct brain antioxidant action and an effect of an anti-dementia food material can be expected by long-term regular intake, but for using turmeric for a food material, using a specific dispersion method and a surface active agent is indispensable, and a general-purpose food material excluding supplements has not been provided yet.SOLUTION: Dispersion stability and excellent palate feeling are obtained by selecting gruel as one of commonly used food materials, and reducing a grain diameter of turmeric powder. General-purpose becomes possible by melting and dispersing turmeric once in a dispersion medium, and mechanically milling and dispersing in a gruel aqueous solution followed by bringing into a master batch. When using coconut milk for a dispersion medium, a stable composition is obtained without a dispersion agent. When using green tea powder for improving taste, bitter taste is suppressed, and dispersion becomes stable. An assortment of products of turmeric food material compositions that enable continuously commonly intake is accomplished by adding corn and pumpkin soups to the gruel. (396 characters in total)COPYRIGHT: (C)2017,JPO&INPIT【課題】血液脳関門を通り直接的な脳内抗酸化作用を持つクルクミンを主成分とするウコンを、抗認知症剤として継続摂食を図るには、ウコンの苦味成分を除き、親水性食材に安定に分散させる必要がある。抗認知症食材は長期常用により効果が期待できるが、ウコンの食材利用には、特殊な分散方法や界面活性剤等の使用が不可欠であり、サプリメントを除き、汎用的な食材の提供に至っていない。【解決手段】常用食材の一つに粥を選び、ウコン粉末の粒径を小さくすることで、分散安定性と良好な食感を得た。分散媒体にウコンを一旦、溶解、分散して、更に粥水溶液に機械的に摩砕分散し、マスターバッチにして汎用化を可能とした。分散媒体にココナッツミルクの使用時は、分散剤なしで安定な組成物を得た。食味改善に緑茶粉末を使うと苦味が抑えられ、更に分散も安定した。粥にとうもろこしとカボチャのスープを加え、継続的な常用摂食が可能なウコン食材組成物の品揃えを完成させた。以上396文字
