PROBLEM TO BE SOLVED: To provide a method for culturing a Shiitake mushroom (lentinus edodes) with high-pressure water spraying capable of reducing operation time per water spraying, performing the operation with a long time interval, and obtaining a uniform and high quality Shiitake mushroom.SOLUTION: The high quality Shiitake mushroom is uniformly obtained by: stimulating a surface of a mushroom bed 5 until the surface of the mushroom bed 5 turns to be blackish dark brown with high-pressure jet water 7 by a water spraying nozzle 2 in the period from when the surface of the mushroom bed 5 starts turning to be dark brown until when browning is completed after a mycelial pellet is generated on the mushroom bed 5 during culturing repeating the operation until a fruit body is generated after leaving the operation for one day and repeating to change the color of the surface of the mushroom bed 5 into blackish dark brown.COPYRIGHT: (C)2013,JPO&INPIT【課題】散水の1回の作業時間を短縮可能とし、しかもその作業を長時間の間隔を置いて行うことができ、均一で高品質なシイタケを得ることができるシイタケの高圧散水栽培方法を提供する。【解決手段】培養中の菌床5に菌糸塊が発生した後、菌床5表面が褐色に変わり始まる時期から褐変が終了した時期において、菌床5の表面に散水ノズル2による高圧な噴出水7で、菌床5の表面が黒茶褐色に変わるまで刺激を与え、この作業を中1日置いて子実体の発生まで繰り返し、その菌床5の表面を黒茶褐色に変色させることを繰り返すことによって高品質のシイタケを均一に得られるようにしたことを特徴とする。【選択図】 図1
