PURPOSE: A decomposition method of Chionoecetes japonicas shell protein using proteinase A is provided to effectively decompose the leg shell protein of Chionoecetes japonicas.CONSTITUTION: Chionoecetes japonicas leg shell protein powder is prepared. The leg shell protein powder is dispersed in distilled water. The leg shell protein powder solution is mixed with proteinase in a ratio of 1:1. The proteinase is selected from protease A, protamex, flavourzyme, or alcalase. 15% of the Chionoecetes japonicas leg shell protein powder for the total amount of distilled water is dispersed to produce the powder solution. The concentration of the processing enzyme is 0.5%, and the enzyme processing is conducted at 50°C for 24 hours in the pH of 7.COPYRIGHT KIPO 2013본 발명은 단백질분해효소를 이용하여 홍게(Chionoeoetsjaponicus) 껍질에 함유된 단백질을 분해하는 방법에 관한 것이다. 본 발명의 방법에 사용되는 프로테아제 에이(Protease A) 효소는 홍게 껍질 단백질 분해가 우수하며, 본 발명의 조건에 따라 프로타멕스(Protamex) 등의 효소와 함께 사용할 경우 단백질 수율이 높으며 아미노산 조성이 우수한 가수분해물을 생산할 수 있다. 따라서 본 발명의 방법은 홍게 다리껍질에 함유된 단백질을 영양조성물로 활용할 수 있는 유용한 방법이 될 수 있다.
