PROBLEM TO BE SOLVED: To provide a method for producing a meat-like food made of soybeans, capable of stably obtaining at a low price a meat-like food made of soybeans, including texture similar to that of natural meat, and a meat-like food made of soybeans and produced by the same.SOLUTION: There is adopted a method for producing a meat-like food made of soybeans, as a method for producing a meat-like food by using a soybean powder, including: a step of gelatinizing in a container a soybean powder aqueous solution containing 10-25 pts.mass of a soybean powder, based on 100 pts.mass of water, and a coagulant, and generating soybean powder aqueous solution gel a step of cooling the soybean powder aqueous solution gel stored in the container toward one direction in the vertical direction, growing ice crystals in the soybean powder aqueous solution gel, and dehydration concentrating the soybean powder aqueous solution gel so as to bring to a high-concentration soybean powder aqueous solution gel a step of freezing and fixing the high-concentration soybean powder aqueous solution gel, and generating a fibrous soybean protein raw material and a step of thawing the soybean powder aqueous solution gel, and separating and acquiring the fibrous soybean protein raw material.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2017,JPO&INPIT【課題】天然肉に似た食感を備えた大豆製肉様食品を安価に且つ安定して得ることが出来る大豆製肉様食品の製造方法及びその製造方法により製造された大豆製肉様食品を提供することを目的とする。【解決手段】大豆粉を用いて肉様食品を製造する方法であって、水100質量部に対して10~25質量部の大豆粉と凝固剤とを含有した大豆粉水溶液を容器内においてゲル化させ、大豆粉水溶液ゲルを生成する工程と、当該容器内に収容した当該大豆粉水溶液ゲルを上下方向の一方向に向けて冷却して、当該大豆粉水溶液ゲル中に氷結晶を成長させて、当該大豆粉水溶液ゲルを脱水濃縮して高濃度大豆粉水溶液ゲルとする工程と、当該高濃度大豆粉水溶液ゲルを凍結固定させて、繊維状大豆蛋白素材を生成させる工程と、当該大豆粉水溶液ゲルを解凍し、当該繊維状大豆蛋白素材を分離して取得する工程とを含むことを特徴とする大豆製肉様食品の製造方法を採用する。【選択図】図1
