The present invention relates to a process for the use of byproducts of coffee in the production of proteins, polyphenols, vitamins and minerals, using processes of concentration and conservation of coffee cherry pulp (husk) to obtain a flour suitable for use in products for human consumption, animal consumption, drugs, cosmetics or as raw material for the production of ethanol, wherein said process makes it possible to reduce the pollution of the environment by avoiding the waste of coffee byproducts and to exploit the properties and advantages of same for producing the aforementioned products.
