The production method of tangerine peel dough which uses tangerine skins comprises the following steps: collecting the skin from the washed tangerine； drying the collected tangerine peel until the weight of the tangerine peel is 25-35% when compared to the tangerine before a drying process at 20-40°；C； pulverizing the dried tangerine peel into 100-300 meshes to obtain tangerine peel powder； and mixing 10-50 parts by weight of tangerine peel powder, 1,000 parts by weight of grain powder formed of flour or barley powder, 150-300 parts by weight of sugar, 100-150 parts by weight of stirred eggs, 300-350 parts by weight of melted butter, and 50-70 parts by weight of oligosaccharide.
