The present invention relates to a blueberry beverage manufactured by using a low-temperature enzyme extraction method and a method for manufacturing the same and, more specifically, to a blueberry beverage to prevent degeneration of blueberries and destruction of nutrients and maximize extraction efficiency by extracting blueberries at low temperature by using an enzyme. According to the present invention, the method for manufacturing a blueberry beverage by using a low-temperature enzyme extraction method comprises: a crushing step (S100) of crushing blueberries into a size of 5-10 mm a blueberry enzyme extract liquid obtaining step (S200) of obtaining blueberry enzyme extract liquid after performing enzyme treatment of the crushed blueberries and the enzyme at a predetermined temperature, time, and agitation speed a sub-additive mixing step (S300) of mixing the blueberry enzyme extract liquid with a sub-additive and a sterilizing step (S400) of sterilizing the mixture.COPYRIGHT KIPO 2017본 발명은 저온 효소추출법을 이용한 블루베리 음료와 그의 제조방법에 관한 것으로서, 보다 상세하게는 블루베리를 저온에서 효소를 이용하여 추출함으로써 변성과 영양 성분의 파괴를 방지하고 추출 효율을 극대화한 블루베리 음료와 그의 제조방법에 관한 것이다.본 발명에 따른 저온 효소추출법을 이용한 블루베리 음료의 제조방법은 블루베리를 5 내지 10mm로 파쇄하는 파쇄단계(S100)와 파쇄된 블루베리와 효소를 소정 온도, 시간, 교반 속도로 효소처리한 후 블루베리 효소 추출액을 수득하는 블루베리 효소 추출액 수득단계(S200)와 상기 블루베리 효소 추출액과 부첨가물을 배합하는 부첨가물 배합단계(S300)와 배합물을 살균하는 살균단계(S400)를 포함하는 것을 특징으로 한다.
