The present invention relates to an apparatus of salting vegetables for Kimchi and, more particularly, to an apparatus of salting vegetables for Kimchi, capable of evenly performing a salting process of a Kimchi material without salinity variations, salting a midrib portion of a cabbage with even salinity without the damage of an appearance, and shortening the salting time. According to the present invention, the apparatus of salting vegetables for Kimchi comprises: a needle device including a needle injecting salt water while being inserted into vegetables and separated therefrom; a salt water supply unit supplying salt water to the needle device; a needle driving unit operating the needle device; a weight sensing unit sensing the weight of vegetables; and a controlling unit controlling the operations of the salt water supply unit according to a signal sensed by the weight sensing unit to control an injection amount of salt water. According to the apparatus of salting vegetables for Kimchi of the present invention, as the needle is inserted inside a body of vegetables to supply salt water, the apparatus can evenly perform salting operations without salinity variations to deep positions such as a midrib portion of a cabbage. Moreover, as salt water is supplied by a needle in a manner of not making cuts llike a conventional method but inserting the needle into a midrib portion of a cabbage, a salting process can be performed without the damage of an appearance relatively. Therefore, marketability can be improved. In addition, after a form and a size of vegetables is sensed by a vegetable form sensing unit, salt water is properly injected according to the form and the size of vegetables to properly salt the vegetables.
