PROBLEM TO BE SOLVED: To provide an edible oil excellent in the taste of an olive oil and suitable for saline, a method for increasing the pungency of an olive oil, and a method for retaining the flavor of an olive oil.SOLUTION: Provided is an edible oil comprising: middle chain fatty acid triglyceride and an olive oil at a mass ratio of (0.1:99.9) to (60:40). Also provided is an edible oil in which the content of the middle chain fatty acid triglyceride is 30 to 100 mass%. Also provided is an edible oil in which the content of capric acid occupied in the whole quantity of the middle chain fatty acid which composes the middle chain fatty acid-containing triglyceride is 20 to 100 mass%.
