The composition according to claim 1, characterized in that the metabolite is heat-resistant. 3. The composition according to claim 1, characterized in that the metabolite basically does not contain Lactobacillus paracasei CBA L74 cells, accession number LMG P-24778 at the International Depository. A composition according to claim 1, characterized in that the metabolite reduces the cellular penetration of the gliadin peptide. A composition according to claim 1, characterized in that the gliadin peptide is an α-gliadin peptide. The composition of claim 5, wherein the α-gliadin peptide has an amino acid sequence selected from the group consisting of LGQQQPFPPQQPY (SEQ ID NO: 1); QLQPFPQPQLPY (SEQ ID NO: 2); LGQQQPFPPQQPYPQPQPF (SEQ ID NO: 3); and LQLQPFPQPQLPYPQPQLPYPQPQLPYPQPQPF (SEQ ID NO: 4). 7. A composition according to claim 1, characterized in that the gluten-related disorder is celiac disease or sensitivity to gluten. The composition of claim 1, further comprising a physiologically acceptable carrier. The composition of claim 8, wherein the physiologically acceptable carrier is a food product or pharmaceutical carrier. A method for treating a subject having a gluten-related disorder, comprising: a) identifying a subject in need of treatment; b) administering an effective amount of a composition comprising a metabolite produced by Lactobacillus paracasei CBA L74, accession number LMG P-24778 in the International Depository, characterized in that the metabolite reduces the toxicity symptom of the gliadin peptide. 11.
