PURPOSE: A method of manufacturing a composition of vegetable and fruit beverages is provided to manufacture beverage having excellent organoleptic property such as the taste, color and flavor by improving the unique flavor and taste of figs. CONSTITUTION: Figs are crushed. Purified water 20-40 parts by weight is added to the crushed figs 100 parts by weight, heated at 80-90deg.C for 8-12 minutes and cooled to 50-55deg.C. A pectinase and beta-amylase 0.1-0.2 parts by weight are added to the cooled undiluted fig solution 100 parts by weight and left for 2-6 hours. The undiluted fig solution which has been decomposed by enzymolysis is deactivated at 90-95deg.C for 8-12 minutes. The deactivated fig enzyme decomposition liquid is cooled, filtered and vacuum concentrated. Fig concentrate is manufactured by sterilizing the concentrated liquid at 90-95deg.C for 10-20 minutes and cooling to 60-70deg.C. Fructose 5-15wt%, oligosaccharides 0.5-5wt%, citric acid 0.1-0.2wt% and vitamin C 0.01-0.1wt% are mixed. The fig concentrate 1-5wt% is added and mixed with the mixture. SY-Red pigment 0.005-0.05wt%, color mix RS-L pigment 0.005-0.05wt%, fig flavor 0.005-0.15wt% and purified water 74.45-93.465wt% are added to the combined mixture and stirred at 15deg.C or less for 20-60 minutes. The mixed solution is filtered. The filtered solution is sterilized at 80-110deg.C for 10-40 seconds. The sterilized filtered solution is cooled to the temperature of 70-100deg.C, and packed in a container. The oligosaccharide is fructo-oligosaccharide, galacto oligosaccharide malto oligosaccharide or their mixture. The SY-RED pigment is a mixture of red cabbage pigment, Gardenia blue pigment and cochineal pigment.
