The present invention relates to a process for the production of a frozen food product comprising the steps of: i) contacting a food intermediate with an emulsifier system and ii) subjecting the food intermediate to freezing conditions whilst agitating the food intermediate, characterized in that the emulsifier system consists essentially of: a) compounds of formula I: wherein Ri is a hydrocarbon group, and unsaturated lactylated monodiglycerides or b) compounds of formula I wherein R1 is a hydrocarbon group, and saturated mono-diglycerides or c) compounds of formula I wherein R1 is a hydrocarbon group, and saturated mono-diglycerides and unsaturated lactylated mono-diglycerides or d) propylene glycol monostearate and mono-diglycerides o wherein "mono-diglycerides" refers to monoglycerides, diglycerides and mixtures thereof, wherein "unsaturated actylated mono-diglycerides" refers to lactylated monoglycerides, lactylated diglycerides and mixtures thereof having an iodine value greater than 5 and wherein "food intermediate" refers to a mixture of ingredients suitable for preparing a frozen food product.
