PURPOSE: A method of manufacturing sweet and sour pork is provided to have the sweet and sour pork in which the functionality, the fresh taste and the whole preference is remarkably improved; and the unique off-flavor of pork is removed. CONSTITUTION: A pork sirloin is cut. An egg white, glutinous rice flour, nonglutinous rice powder, corn starch, tapioca starch, potato starch and water are mixed and kneaded. The cut sirloin of pork is inserted in the kneaded batter, coated and fried in cooking oil. A sliced apple, a sliced onion, a sliced lemon, a sliced scallion, a sliced ginger, a sliced cheongyang red pepper or a sliced red pepper, a sliced parsley, a sliced rosemary, a sliced clove, a sliced bay leaf and a jasmine are added in the water; and a first sauce is prepared after heated. The first sauce is filtered and the water is added in the filtered sauce. Vinegar, sugar, Chinese soy sauce, caramel, Japanese apricot concentrate, ketchup, steak sauce and Worcester sauce are added in the filtered sauce and heated to prepare a sauce for sweet and sour pork. The fried pork sirloin is mixed with the sauce for sweet and sour pork and heated; and mixture of a sliced red cabbage, a sliced onion, a sliced cucumber, a sliced bell pepper, raisin, cherry, macaroni, red pepper oil, potato starch and water is added.본 발명은 탕수육의 제조 방법 및 상기 방법에 의해 제조된 탕수육에 관한 것이다. 본 발명의 방법은 파슬리, 로즈마리, 클로버, 월계수 잎 및 쟈스민을 이용하여 제조함으로써 다양한 약리적인 성분들이 함유되어 있다. 본 발명의 방법에 의해 제조된 탕수육은 쓴 냄새(맛), 신 냄새(맛) 및 비린 냄새는 억제되고, 구수한 냄새(맛) 및 담백한 맛이 개선되어 전체적인 기호도가 증가하였다.
