PROBLEM TO BE SOLVED: To produce an edible oil beverage using polysaccharide and polysaccharide polymer.SOLUTION: A method for producing an edible oil beverage includes the steps of: 1) dissolving polysaccharide and polysaccharide polymer into a buffer solution, sterilizing, mixing and rapidly stirring to thereby produce a polysaccharide and polysaccharide polymer buffer solution; 2) emulsifying an edible oil by adding an edible oil to an emulsifier and rapidly and strongly stirring for emulsification to produce an edible oil emulsion; 3) mixing the polysaccharide and polysaccharide polymer buffer solution with the edible oil emulsion, adding a dispersion liquid and rapidly stirring to thereby produce a suspended polysaccharide and polysaccharide polymer edible oil mother liquid; and 4) diluting the suspended polysaccharide and polysaccharide polymer edible oil mother liquid, adding a compounding agent, stirring and sterilizing to thereby produce a suspended polysaccharide and polysaccharide polymer edible oil beverage. The thus-produced edible oil beverage is a beverage product which hardly suffers from oxidation of unsaturated fatty acid, has a long expiration date, has a high absorption and utilization efficiency to the human body, is acceptable for many people, is easy to eat and drink and is excellent in texture.SELECTED DRAWING: Figure 1【課題】多糖及びそのポリマーを用いて食用油飲料を製造する。【解決手段】本発明は、1)多糖及びそのポリマーを緩衝液に溶解し、殺菌し、混合し、急速に撹拌することにより、多糖及びそのポリマーの緩衝液を得る工程と、2)食用油を乳化剤に添加し、急速に強撹拌することで乳化し、食用油乳化液を得る工程と、3)前記多糖及びそのポリマー緩衝液を食用油乳化液と混合し、分散液を添加し、急速に撹拌することにより、多糖及びそのポリマー懸濁食用油母液を得る工程と、4)多糖及びそのポリマー懸濁食用油母液を希釈し、配合剤を入れ、撹拌し、殺菌することにより、多糖及びそのポリマー懸濁食用油飲料を得る工程とを含む。製造された食用油飲料は、不飽和脂肪酸が酸化されにくく、賞味期限が長く、人体への吸収利用効率が高く、多くの人に適用され、飲食しやすく、食感に優れた飲料製品である。【選択図】図1
