The present invention relates to a method for producing dried bulbs and tubers, comprising the following steps: perforating surfaces of bulbs and tubers using microneedles and rapidly freeze-drying the perforated bulbs and tubers. According to the present invention, nutritional value of bulbs and tubers increases, and it is possible to provide consumers with high quality products by simple processes.
