The disclosure relates to a method of recovering water from a process for concentrating an extracted plant juice, the method including the steps of: providing a concentrator waste stream from a concentrator for concentrating extracted plant juice; and purifying the concentrator waste stream including the steps of passing the concentrator waste stream through a size exclusion process, and through activated carbon; wherein purification of the concentrator waste stream is performed under the conditions such that the resultant water has a sugar level of less than that of the concentrator waste stream, and wherein the step of purifying the concentrator waste stream further includes the step(s) of subjecting the concentrator waste stream to reverse osmosis and/or adsorption to a sugar binding adsorbent, the reverse osmosis and/or adsorption steps being performed prior to activated carbon treatment, and wherein the step of purifying the concentrator waste stream may also include the step of passing the concentrator waste stream through an ion exchange resin.
