A process for producing crystal clear maple sap water extracted from maple sapbefore the production of maple syrup is described. The maple sap is subjectedto a firstreverse osmosis treatment before the maple sap is sent to theboiler/evaporator toincrease the concentration of sugar in the sap water which results in costsavings for theproduction of maple syrup. The extracted sap water is shipped to a bottlingplant whereit is subjected to a second reverse osmosis treatment prior to bottling toproduce acrystal clear purified potable maple sap water.
