A method for preparing the water to be used for manufacturing beverage or food by using deep seawater comprises the steps of heating the collected deep seawater at 20-30 deg.C； filtering it by sand filtration, microfiltration and/or ultrafiltration to produce the pretreated deep seawater； desalting it by nanofiltration and reverse osmosis filtration； adjusting the pH to be 9-11 by using NaOH, NaHCO3 or Na2CO3； removing salt and boron by second reverse osmosis filtration； adding a hardness control agent to it to control the hardness of water； magnetizing it； and treating it with the microclustered water of the half-width of 17O-NMR of 48-60 Hz.본 발명은 음료 또는 식품을 만드는 데 사용하는 용수를 제조하는 방법에 관한 것으로, 더욱 상세하게는 해수면에서 수심 200m보다 깊은 해저심층의 해양 심층수를 이용하여 음료 또는 식품을 만드는 데 사용하는 용수를 제조하는 방법에 관한 것이다.이를 위하여 본 발명은, 해수면에서 수심 200m보다 깊은 해저심층의 해양 심층수로부터 탄산청량음료, 알코올음료, 야채나 과일추출음료, 유산균음료(乳酸菌飮料), 아이소토닉음료(Isotonic drink), 유성음료(乳性飮料) 등의 음료와 식품의 제조에 사용할 수 있는 용수의 제조를, 취수된 해양 심층수를 전 처리하는 단계, 염분 및 붕소를 제거하는 단계, 염분 및 붕소가 제거된 담수에 경도조정제를 주입하여 경도(硬度)를 조정한 다음, 물 분자의 집단(Cluster)을 소집단화(小集團化)하여 핵자기공명(核磁氣共鳴: Nuclear magnetic resonance, NMR) 17O-NMR 스펙트럼(Spectrum) 반치폭(半値幅) 값이 45∼60㎐ 범위의 소집단수(小集團水: Microclustered water)로 처리하여 음료 또는 식품제조의 용수로 처리하는 용수제조단계로 이루어진 것에 특징이 있다.
