A process for making a frozen confection having a total solids content of less than 10% by weight of the frozen confection is provided, the process comprising:a) preparing a mix of ingredients comprising water and having a total solids content of at least 12% by weight of the mixb) partially freezing the mix in a dynamic freezerc) drawing the partially frozen mix from the freezerd) combining the partially frozen mix with an amount of frozen particles to form a frozen confection,wherein the total solids content of the frozen particles is less than 1% by weight of the frozen particles the mean size of the frozen particles is greater than 0.5mm and the amount of frozen particles is chosen such that the total solids content of the frozen confection is less then 10% by weight of the frozen confection. A frozen confection is also provided.
