FIELD: food industry.SUBSTANCE: invention relates to food industry, in particular to production of composite food products based on compositions of raw materials of vegetable origin of functional purpose. Disclosed is a method for preparation of a vegetable composition for production of functional food system, in which "Vitazar" wheat germ flour, amaranth seed flour and pumpkin seed flour, or "Vitazar" wheat germ flour and amaranth seed flour, or "Vitazar" wheat germ flour and pumpkin seed flour, amaranth seed flour and pumpkin seed flour are mixed with selenium-containing food additive "Seleksen" and biologically active additive "Flavocen (dihydroquercetin)" and subjected to hydration with drinking water at a ratio of vegetable raw materials: water 1:1.6-2.0 for 15-45 min at t = 35±2 °C, throughly mixing until homogeneous consistency is achieved, wherein vegetable compositions are prepared with given content of components, wherein disclosed vegetable compositions can be used in meat, fish, dairy, bakery and confectionary industries.EFFECT: invention widens range of food products and culinary products with balanced content of ω-6 and ω-3 fatty acids intended for general, medical and preventive, dietary and special nutrition, reducing intensity of oxidative processes of fat fraction of "Vitazar" wheat germ flour, amaranth seed flour and pumpkin seed flour during storage, which prolongs storage life, increases nutritional and biological value of food products, and increases content of vitamins, essential substances, macro-and microelements, reduces cost of raw material set according to recipe.1 cl, 3 tbl, 4 exИзобретение относится к пищевой промышленности, в частности к производству комбинированных пищевых продуктов на основе композиций сырья растительного происхождения функциональной направленности.
