PROBLEM TO BE SOLVED: To provide a method for absorbing water in rice in an extremely short time, so that quickly cookable rice can be cooked without immersion in water.SOLUTION: Non-immersed rice is sprayed with hot water at 30 to 90°C for about 1 to 3 minutes under superheated steam atmosphere at 100°C or higher. The obtained rice contains water at a water absorption of about 30%, which can be directly cooked with a rice cooker. After the treatment described above using a tranport path such as a belt conveyor, primary steaming by saturated steam and secondary steaming by superheated steam may be consecutively performed.
