The present invention relates to restorative instant rice which can be eaten after being restored by water in a dried state. According to an embodiment of the present invention, a manufacturing method for restorative instant rice comprises: a cooking step of cooking rice; a reversing step of drying or washing the rice cooked in the cooking step in order to separate grains of the rice; a first freezing step of freezing the rice reversed in the reversing step at a previously set temperature; a first drying step of drying the rice frozen in the first freezing step at a previously set temperature; a restorative adding step of adding restorative additives in a state of restoring a portion of the dried rice in the first drying step; a second freezing step of freezing the restorative rice added with the restorative additives in the restorative adding step at a previously set temperature; and a second drying step of drying the restorative rice frozen at the second freezing step at a previously set temperature. In addition, the restorative adding step comprises: a restoring step of restoring a portion of the outer surface of the rice dried in the first drying step by steam; and an impregnating step of putting the rice restored in the restoring step into the restorative additives, and repetitively conducting pressurization and expansion by a turgor device in order to impregnate the rice with the restorative additives.
