PROBLEM TO BE SOLVED: To mix soybean milk and a coagulant evenly in short time, for producing soybean curd having no coagulation unevenness.SOLUTION: A soybean curd production device is configured so that: a tip end of a coagulant injection nozzle 4 which is disposed in a soybean milk storage space 3a of a soybean milk storage container 3 for storing soybean milk 2, and has a coagulant injection port 6 for injecting a coagulant 5 on its tip end, and a soybean milk agitation plate 7 disposed in the soybean milk storage space 3a of the soybean milk storage container 3 and has an agitation penetration port 8 for agitating soybean milk 2 in the soybean milk storage container 3, move by proximate and separation movements in the soybean milk 2 to the bottom face of the soybean milk storage container 3, by a nozzle drive mechanism 9 while injecting the coagulant 5 from the coagulant injection port 6 to the soybean milk 2 stored in the soybean milk storage container 3, and while supplying the coagulant 5 to the soybean milk 2 by the coagulant injection nozzle 4, the soybean milk agitation plate 7 mixes the soybean milk 2 and the coagulant 5, for producing soybean curd having no coagulation unevenness.SELECTED DRAWING: Figure 3COPYRIGHT: (C)2016,JPO&INPIT【課題】豆乳と凝固剤とを短時間で均一に混ぜ合せて、凝固ムラのない豆腐を製造する。【解決手段】豆乳2を収納する豆乳収納容器3の豆乳収納空間3aに配されて先端に凝固剤5を噴射する凝固剤噴射口6を有する凝固剤注入ノズル4の先端と、豆乳収納容器3の豆乳収納空間3aに配されて豆乳収納容器3内の豆乳2を撹拌する撹拌貫通口8を有する豆乳撹拌板7とが、豆乳収納容器3に収納された豆乳2に凝固剤噴射口6から凝固剤5を噴射しながら、ノズル駆動機構9によって、豆乳2内を豆乳収納容器3の底面に対して近接離間移動して、凝固剤注入ノズル4によって豆乳2に凝固剤5を供給しつつ豆乳撹拌板7によって豆乳2と凝固剤5とを混ぜ合わせて、凝固ムラのない豆腐を製造する。【選択図】図3
