Method for obtaining a texturizing lactic acid bacteria strain, said method comprises: a) providing a lactic acid bacteria stock； b) isolating a mutant from said mother strain that is resistant to (i) D-cycloserine and / or (ii) an antibiotic that has the same mode of action or the same objective as D-cycloserine and that inhibits D-alanine aracemase, D -alanyl-D-alanine ligase, D-alanylalanine synthase or alanine-D permease； and c) selecting said mutant if it produces more texture as determined by higher shear stress and / or higher gel stiffness when it grows in milk than the mother strain when it grows in said milk.Método para obtener una cepa de bacterias de ácido láctico texturizantes, dicho método comprende: a) proporcionar una cepa madre de bacterias de ácido láctico； b) aislar un mutante de dicha cepa madre que es resistente a (i) D-cicloserina y/o (ii) un antibiótico que tiene el mismo modo de acción o el mismo objetivo que D-cicloserina y que inhibe D-alaninaracemasa, D-alanil-D-alanina ligasa, D-alanilalanina sintasa o alanina-D permeasa； y c) seleccionar dicho mutante si éste produce más textura como se determina por tensión de corte superior y/o rigidez de gel superior cuando crece en la leche que la cepa madre cuando crece en dicha leche.
