PROBLEM TO BE SOLVED: To provide an oil-in-water type emulsion which allows the separation and aggregation to be inhibited even under acid conditions, maintains a stable emulsion state even when heated in a wide range of pH, and inhibits the separation and aggregation due to heating treatment at high temperature required for sterilization.SOLUTION: The oil-in-water type emulsion contains a transesterified oil (A) of: 5 mass% or more and less than 30 mass% of a lauric oil (A1) having a lauric acid content of 30 mass% or more in the entire constituent fatty acids, and an iodine number of 2 or less and more than 70 mass % and 95 mass% or less of a palm oil (A2) having a content of fatty acids with 16 or more of carbon atoms of 35 mass% or more in the entire constituent fatty acids, and an iodine number of 25 to 48.
