An oil/fat composition and a preparation method for the same. The preparation method for the oil/fat composition comprises a random interesterification step: an oil/fat is subjected to a random interesterification and the oleic acid content is 40wt% or more and/or the palmitic acid content is 25wt% or more in said oil/fat. In the oil/fat composition, the content of Sn-2 palmitic acid esterified at the total palmitic acid is 30-80wt% and/or the content of Sn-2 palmitoleic acid esterified at the total palmitoleic acid is 20-60wt%. The method greatly reduces the requirement for the starting material, compared with the prior method, does not require controlling the content of the Sn-2 position palmitic acid in the fat/oil starting material, and therefore greatly widens the source for the fat/oil starting materials. In the oil/fat composition, the ratios of palmitoleic acid and the Sn-2 position palmitoleic acid to the total palmitoleic acid are close to those in the human milk fat.Linvention concerne une composition huile/matière grasse et un procédé de préparation de cette dernière. Le procédé de préparation de la composition dhuile/matière grasse comprend une étape dinterestérification aléatoire : une huile/matière grasse est soumise à une interestérification aléatoire et la teneur en acide oléique est de 40 % en poids ou plus et/ou la teneur en acide palmitique est de 25 % en poids ou plus dans ladite huile/matière grasse.
