PROBLEM TO BE SOLVED: To provide a cleaning agent capable of removing bran and a composition and a method related to the cleaning agent and a rinsing agent for obtaining soft and delicious cooked rice free from yellowing and further to provide food, such as cooked rice and fried rice, obtained by the composition and the method.SOLUTION: The invention has been completed by finding the method for cleaning rice, which includes two steps of: a cleaning step of cleaning rice bran and a step of performing decoloration of yellowing. The soft and delicious food of cooked rice and fried rice free from unpleasant odor/unpleasant taste/yellowing is provided by application of an optional acid material including food or food additives and by specifying fired calcium of biological origin as a cleaning agent composition without using any chemical materials, such as sodium sulfite which is widely used as a yellowing inhibitor.COPYRIGHT: (C)2013,JPO&INPIT【課題】本発明は糠の除去ができる洗浄剤と黄変がなく、ふっくら美味しい米飯を得る洗浄剤と濯ぎ剤に関する組成物および方法を提供することを課題とする。更には、上記組成物及び方法によって得られる米飯、焼飯等食品の提供を課題とする。【解決手段】米糠を洗浄する洗浄工程と、黄変を脱色する二工程からなる洗米方法を発見し発明を完成した。生物由来焼成カルシウムを洗浄剤組成物に特定し、黄変防止剤として広く使用される亜硫酸ナトリウムなど化学物質を一切使用することなく、食品または食品添加物からなる任意の酸性物質を適用し、不快臭/不快味/黄変のないふっくらと美味しい米飯焼飯食品を提供する。【選択図】 なし
