The invention relates to an efficient and reproducible process for generating glucosamine from plants which allows high glucosamine content to be obtained while reducing the content of residual ammonium or sulfate ions. The invention also concerns food compositions or cosmetic compositions which comprise the obtained glucosamine-enriched plant compositions.La présente invention concerne un procédé efficace et reproductible de génération de glucosamine à partir de plantes, ledit procédé permettant l'obtention d'une teneur élevée en glucosamine et une réduction de la teneur en ammonium ou en ions sulfate résiduels.
