PROBLEM TO BE SOLVED: To provide a soybean hypocotyl processed product, which can be eaten as it is, which is a granular state having presence feeling, which has texture with crunchy feeling and good flavor.SOLUTION: A soybean hypocotyl is adjusted so that a bulking degree becomes 1.1 times to 1.4 times, and the soybean hypocotyl is subjected to heating and bulking processing, therefore, a soybean hypocotyl processed product which is a granular state having presence feeling and has texture with crunchy feeling, and good flavor, is acquired.COPYRIGHT: (C)2016,JPO&INPIT【課題】そのまま食することができ、且つ存在感のある粒状の形態でカリカリと歯ごたえのある食感と風味のよい大豆胚軸加工品を得ることを解題とした。【解決手段】大豆胚軸が膨化度1.1倍~1.4倍になるように調整し加熱膨化加工を施すことにより、存在感のある粒状の形態でカリカリと歯ごたえのある食感と風味のよい大豆胚軸加工品を得ることができた。【選択図】なし
