PROBLEM TO BE SOLVED: To provide micronutrient-enriched reconstituted rice, a method for preparing thereof from comminuted rice matrix material, and mixtures of such enriched reconstituted rice with natural rice, and a method for the preparation of reconstituted rice kernels from comminuted or broken rice.SOLUTION: The method for the preparation of enriched reconstituted rice which comprises the steps of (a) hydrating a mixture of a comminuted rice matrix material, at least one micronutrient, and an emulsifier to obtain a paste containing 15-35 wt.% of water and kneading the paste obtained while heating to about 70-100°C for no more than about 5 minutes until the rice starch is semigelatinized； (b) forming the semigelatinized mass to strands and cutting them to obtain grains similar or equal to the size of rice grains； and (c) drying the grains to a moisture content of no more than 15 wt.%.【課題】微量栄養素強化再構成米と、粉砕米マトリックス材料からそれを調製する方法と、そのような強化再構成米と天然米との混合物と、粉砕米または砕け米から再構成米粒を調製する方法を提供する。【解決手段】（ａ）１５～３５重量％の水を含有するペーストが得られるように粉砕米マトリックス材料と少なくとも１種の微量栄養素と乳化剤との混合物を水和させて、米デンプンが半糊化されるまで約５分間以下で約７０～１００℃に加熱しながらこの得られたペーストを混捏する工程と、（ｂ）米粒のサイズに類似しているかまたは等しい穀粒が得られるように、この半糊化された塊をストランドの形態に成形してそれらをカットする工程と、（ｃ）１５重量％以下の含水量になるまでこの穀粒を乾燥させる工程と、を含む強化再構成米の調製方法。【選択図】なし
